Penne with fresh vegetables

Asparagus, grape tomatoes, peas, and basil. A weeknight pot from the warehouse.

What to grab

  • 1 box penne
  • 2½ cups red grape tomatoes, halved
  • ½ cup white onion, chopped
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 1 lb asparagus, trimmed and sliced
  • 1 cup peas
  • Fresh basil, salt, and black pepper

How to cook

  1. Boil a large pot of salted water.
  2. Warm the oil in a wide skillet. Cook onion and garlic 3–4 minutes. Add asparagus for 3 minutes more.
  3. Add tomatoes. Cook 2–3 minutes until they soften. Season.
  4. Cook the pasta. Drain. Toss the hot pasta in the skillet.
  5. Plate and finish with basil.

Sweet pepper pizza poppers

Mini peppers stuffed with tomato, cheese, and pepperoni. Air-fryer fast.

What to grab

  • 12 mini sweet peppers
  • 1 cup onion, finely chopped
  • 2 tbsp garlic, finely chopped
  • 3 cups chopped tomato
  • ¼ cup white wine
  • 2 tbsp olive oil
  • Fresh basil
  • 2 cups shredded mozzarella
  • Mini pepperoni, chili flakes, salt, and pepper

How to cook

  1. Warm the oil. Cook onion and garlic 5 minutes until golden.
  2. Add tomato, wine, and salt. Simmer 10 minutes on low until it thickens. Take it off the heat.
  3. Halve the peppers. Fill with sauce, cheese, and pepperoni.
  4. Air-fry 15 minutes at 390°F.
  5. Finish with basil and chili flakes.

Baked feta and tomato dip

Grape tomatoes, feta, and pepper in one dish. Serve with pita chips.

What to grab

  • Olive oil
  • 1 tsp minced garlic
  • ¼ cup red onion, thinly sliced
  • 1½ cups grape or cherry tomatoes
  • 1 cup feta, in chunks
  • Coloured bell pepper
  • Fine herbs, salt, and chopped parsley
  • Pita chips

How to cook

  1. Stir oil, garlic, onion, tomatoes, feta, pepper, herbs, and salt in a baking dish.
  2. Bake at 360°F for 15 minutes.
  3. Stir. Finish with parsley. Serve with pita chips.
